Ingredients

  • 250 grams of carrot
  • 1/2 spoon lemon zest
  • 10 cubes dried apricots
  • 5 spoon butter
  • 3 eggs
  • 100 grams sugar/ you can use brown sugar as well
  • 200 gram whole wheat flour
  • 1/2 spoon cinnamon powder
  • 1/2 spoon nutmeg powder
  • pinch of salt
  • 1 spoon lemon juice
  • 1 spoon baking soda

Directions

Add butter to pan and melt it. Take another bowl and add flour, eggs, sugar and butter in it and whisk the mixture until completely done.

Now add baking soda and salt along with other dry ingredients like diced apricots, lemon zest, lemon juice. once everything is mixed well then let is sit for couple of minutes

Take cake making tin/bowl and brush its all sides and bottom with butter or oil to that cake wont stick after getting baked and comes out easily.

After that pour the cake mixture into baking tin of your instant pot and put some water in inner pot of the instant pot. place with cake tin above water level in instant pot with the help of trivet.

once set close the instant pot lid and set the vents to sealing setting. set it at manual settings with 20 minutes cook time at high temperature. once done the timer will stop and cake would be made. let the pressure reduce naturally in 5-10 minutes after that open the lid and take out the cake tin with the help of trivet and place it in the plate for cutting in slices and serving.

Tips

  • If you love to add cream cheese on the top of the cake then you make that as well with just 200 gram cheese, 3-4 spoon yogurt, 2-3 spoons of icing sugar and your cheese icing is ready to make your cake look and taste better.
