mushroom is tasty and nutritious, i am fan of grilled mushrooms and stir fried mushrooms, mushroom sauce, creamy mushroom veggies mix and various other mushroom dishes beside this mushroom sandwich. try it once you will like it too as it has good taste and lot of power packed nutrients and anti oxidants which are good for our bodies proper working.

Ingredients

  • 4-8 sliced mushrooms
  • 1/2 sliced green pepper
  • 2-4 slices of onions
  • 2-3 horizontal slices of tomatoes or 5-9 vertical medium thin slices
  • 2 slices of oatmeal bread (any other bread of your choice can also be used)
  • 1 spoon olive oil
  • 2-5 basil fresh leaves or 1 spoon dried powder
  • 1/2 Italian seasonings
  • 5-6 spoons grated mozzarella cheese
  • salt as per your taste preference

Directions

in a normal pan add the olive oil and turn up the heat to medium, then add the onions and mushroom for sautéing. do it for couple of minutes. after that add remaining veggies including tomatoes, green peppers, basil leaves in the pan for sautéing for 2 minutes.

turn off the heat once done then add all the veggies on one side of the oatmeal bread slice and sprinkle some seasonings, salt on them. then grate the cheese and close it with other slice of the bread from top and its done.

if you want to melt the cheese then keep the bread sandwich in pan for 2-4 minutes with cover on the pan on low to medium heat and the cheese will get melted to make the sandwich taste good else keep it in microwave for 3-4 minutes and it will get done or use panini sandwich grill for the same purpose or eat without cheese melting, it would taste good then also.

once done serve in the plate with your favorite dip or sauce. this sandwich will give you Italian cuisine like taste and flavor.

Tofu Tomato Sandwich

  • 2-4 slices of tofu
  • 4-6 slices of tomatoes
  • 1 spoon butter
  • 2 slices of multi grain bread
  • 2 spoon shredded cabbage or 2 lettuce leaves
  • salt and pepper as per taste

Directions

To make this delicious sandwich you need to take slice of multi grain bread and the butter on the inner side of the bread then place tofu pieces on it and place the lettuce leaves and cabbage if you like.

add some salt and pepper on it with some cumin powder and fresh cilantro leaves in between. over it place the tomatoes slices and then close the sandwich after applying butter in the bread slice.

once done then place the sandwich in grill to make the outside crusty of the tofu sandwich. and then serve in the plate with some sauce of your choice like ketch up, bbq sauce etc.

Scrambled Eggs sandwich

This is one of the popular sandwich which people like to eat in morning breakfast during rush hour or in evening while relaxing with family. it will give you lot of instant energy for workout and other day to day work.

  • 1-2 eggs
  • thyme
  • rosemary
  • 1 chopped green onion
  • salt and pepper as per your taste preference
  • 2 bread slices
  • 1-2 spoon butter
  • some fresh cilantro leaves
  • 1 chopped green chili
  • 1-2 kale leaves
  • 2-3 slices of avocado or 2 spoon guacamole

Directions

to make this sandwich first you need to prepare scrambled eggs which can be done in 5 minutes, place a pan with olive oil drizzled on it on medium heat and then just take 2 eggs and break them in a pan. then after few seconds add salt and pepper on it and break the omelet into various pieces with the help of saddle to make the scrabbled eggs mixture. then add green onions and rosemary leaves in the mix to add some flavor in the eggs. after that the scrambled eggs are ready to make a sandwich.

take one slice of bread and spread some butter on inside of the bread then place the scrambled eggs mixture on it finely from end to end of the bread slice.

once done spread some thyme leaves on it and then place some fresh cilantro leaves with few finely chopped green chili bits if you like them in your sandwiches. then add kale leaf over it with a slice or 2 of avocado if you have it(guacamole would also work). then place the other slice of bread over it after you have buttered it.

now your sandwiches ready to consume with your favorite sauce like red chili sauce etc. for best taste. some cheese lovers add some cheese also and grill it in the oven or pan on stove for better crispy ness from outside and tenderness from inside, you can also do it if you like to eat crispy egg sandwich.

  • soaked green sprouts
  • chopped green peppers
  • 1/2 spoon lemon juice (optional)

Directions

first you need to make beetroot hummus if its not yet ready which can be done easily by taking 2 beetroots sliced in small pieces and boil them for 5-10 minutes(optional step for better smoothness) and then take them out and add to your blender with 5-7 spoons of orange juice to enhance it taste and then once its completely blended add it to pan with some spices, herbs like cumin powder, black salt, little bit sugar, cilantro powder along with salt to get the tasty beetroot hummus ready in few minutes. keep the flame low and stir occasionally, let it cook for 10-20 minutes till it become thick and then your hummus is ready.

now take the bread slice and place the hummus on it with spoon. then place escarole leaves and then cucumber on top of it.

sprinkle some salt, pepper and spread 1-2 spoon tahini sauce over it. then add chopped pepper, diced tomatoes and some soaked green sprouts if you like on it. then place the other bread and grill if you like or serve directly.

once ready then serve with your favorite sauce and drizzle some lemon juice on top of it if you like the tangy flavor of lemon in your beetroot sandwich.

Chickpeas lettuce sandwich

chickpeas are filled with lot of nutrition in them making this sandwich a protein and energy powerhouse for health conscious people who prefer fit lifestyle along with tasty nutritious food.

Chickpeas lettuce onion healthy sandwich recipe

Ingredients

  • 4-7 spoons of boiled mashed chickpeas
  • 1-3 zucchini slices
  • 1 celery stalk cut in small pieces
  • 1-4 spoons boiled corns
  • 1-2 watercress leaves
  • 2-4 arugula leaves
  • 2 tomato slices
  • 1 pearl onion chopped finely (its substitutes would also work in sandwich)
  • 1-2 lettuce leaves
  • 2-6 parsley leaves
  • salt as per your liking
  • 2 bread slices of your choice
  • 1/4 spoon oregano powder
  • pinch of garlic powder
  • tamarind powder(optional)

Directions

if you have chickpeas ready then its good to go with sandwich making directly else soak them chickpeas i water for 1-2 hours or less then boil them until they become tender which will usually happen after 2-4 whistle in pressure cooker or 20 minutes in normal pan. you can add some salt and 1/2 spoon baking soda in the boiling water to get it done faster and right. you can take 100-300 grams of the chickpeas for this purpose if you want to make more than 1 sandwich and adjust the quantity as per the requirement.

once boiled then add them in a bowl and mash them using a hand masher to make medium level paste out of them. don’t do it too finely too get little bites of chickpeas also in your sandwiches.

now take 2 slices of bread and spread butter on both slices on inside. then spread the chickpeas from end to end of the sandwich. after that add some salt and pepper over it as per your taste liking and place some parsley leaves over it.

then it comes with veggies, add zucchini slices and 1 celery stalk cut in small pieces(i like them grilled), some boiled corn, fresh watercress leaves, 2-3 arugula leaves( optional), 2 -3 tomato slices and finely chopped pearl onion pieces(optional as per your liking), then 1 lettuce leaf to hold everything together.

over the veggies you need to sprinkle some oregano powder, garlic powder, tamarind powder and close the sandwich with other bread slice.

now i would prefer that you grill it in oven, griller or pan with some butter or olive on outside bread slices to get the best taste from this garbanzo beans sandwich made at home easily. if not possible serve it with your favorite dip like tangy spinach dip or tasty sauce like mint cilantro chili sauce which you like with sandwiches in general.
